So, when I woke up this morning, I was desirous to make my own breakfast. I’ve gained some weight and frankly, I’m not happy about it. I’ve been ignoring my exercises, not been walking and waiting for A. to get here to make me food, even though that could be hours before she gets here. Then she makes me breakfast and a few hours later I eat “lunch” then I have “dinner” at 2a with my last meds.
Now I get up, make breakfast, stop being a slug and at least do my exercises with the bands and my leg exercises in my kitchen. The heatwave will be over on Wednesday and all will be well. Right now it’s just too damned hot to live in that freaking un-a/c’d hallway.
To a warming pan, add the following:
1 T salted butter – swirl around pan to melt, then add
1/2 c. pico de gallo, fresh (diced tomatoes, onions and cilantro)
2 slices of cotto salami (I used Oscar Mayer) cut into 1/2″ dice
1/8 tsp. minced garlic (i am a slag; i buy it in a jar; if you do it by hand, one clove, optional)
3 large eggs
1/2 c. finely grated extra sharp grated cheese.
Cook the salami and garlic in the butter til fragrant. Pour in lightly beaten eggs and cover for three minutes. Lift the edges and allow the uncooked egg to run underneath. Cook until set. Enjoy!
